Curried Lentil and Garbanzo Bean Soup

Vegetarian; Gluten and Dairy Free

  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 1 cu carrot, finely chopped
  • 3 cloves garlic, minced
  • 3-6 tsp. curry powder to taste (you can substitute Thai red curry paste, other forms of asian curry, or make your own)
  • 1 cu dried lentils
  • 1 qt. (32 oz.) vegetable stock (you can substitute chicken stock if you're not vegetarian)
  • 1 15oz can of garbanzo beans, drained
  • generous grating of lemon zest
  • 2 tbsp of fresh lemon juice

In a large pot, sauté the the onion and carrots in 2 tbsp of olive oil until the onion is tender--about five minutes.

Stir in the garlic and curry powder. Continue to sauté for about a minute--don't let the garlic brown.

Add the lentils and stock. Bring to a boil, reduce heat and cover. Simmer until lentils are tender--about 35-40 minutes. You may have to add additional stock depending on how dehydrated the lentils are.

While the lentils are cooking, puree the garbanzo beans in a food processor, blender, or using a stick blender. Add the remaining 2 tbsp of olive oil, the lemon zest, and the lemon juice. Blend until smoothe.

15 minutes before serving, add the garbanzo mixture to the lentils and simmer. Season with salt, pepper, and curry to taste.

Makes approx. six servings.

This recipe was taken from a Safeway Kitchen package of dried lentils.

It has become a favorite at the High Mountain Lodge. It is hearty and filling after a day of playing in the mountains.
