Gluten-free baking

Here's a basic substitution guide for baking gluten free:

  • Bob's Red Mill all-purpose gluten free flour is a good starting point. You can then substitute tapioca flour, potato flour, rice flour, quinoa flour, and any other gluten free flour for up to half of the flour called for in the recipe. Some of the flours are highly flavored, so be judicious, and don't be afraid to substitute.
  • Add one tsp. of Xanthan Gum for every cup of flour the recipe calls for.
  • Add one egg more than the recipe calls for.
  • If you can tolerate the gluten in oat flour, it's a good idea to substitute about 1/4 cup of it in the flour. This is because gluten-free baking is notoriously low in fiber, and you will need to plan to get fiber from other sources--fruits and veggies, for example.
  • Instead of baking a loaf of banana bread, try baking them as muffins instead. Increase the oven temperature to 400°F and reduce the baking time to 20-25 minutes.
