Rennie's Vegetarian Root Soup

  • 6 cups vegetable broth
  • 3 medium carrots
  • 2 medium parsnips
  • 2 celery stalks
  • 1-2 russet potatoes
  • 1-2 turnips
  • 1-2 rutabagas
  • 1 large leek, white part only
  • 3-4 tablespoons fresh flat-leafed parsley
  • 1-2 teaspoons salt
  • pepper to taste
  • 1 pinch ground coriander
  • 1 tablespoon butter
  • 1/2 cup sour cream
  • When serving, garnish with:

  • Minced dill or thinly sliced green onions
  • Flavored croutons
  • Dollops of sour cream

Pour broth into soup pot of crock pot. Add veggies and seasonings, and cook until tender.

Add 1/2 cup sour cream and butter.

Blend until creamy, using an immersion blender or regular blender.

May be served hot or cold, and freezes beautifully.

Notes: You can substitute different veggies like sweet potatoes for parsnips, etc., with no problem. I've also roasted or sauteed the veggies in light olive oil before cooking them in the broth. For "dairy free," simply leave out the butter and sour cream. It's a wonderful soup no matter how you fix it. Thanks, Rennie!

 

 

We recently served this marvelous soup at the High Mountain Lodge as a vegetarian and dairy-free alternative to a hearty chile.

The Root Soup was gone before the chile, with people clamoring for more.
